What's Food Integrity Handbook?
More than two decades after the first handbook on food authenticity was published, a group of scientists has collaborated again to produce an updated handbook.
It covers a wider range of foods, now including eggs and egg products, nuts, cereals, plant-based sweeteners, spices, wines, spirits, tea, flavourings and gelatin.
Aimed at a wide audience, whether they are stakeholders in the agri-food sector, scientists or students, this handbook is designed as a simple and structured guide to become your essential companion on food fraud and food authenticity issues. It aims to present, in addition to the challenges of food fraud, the analytical solutions available to address it.
